Chicken is quite a common main served is most homes for a weeknight dinner. It’s also quite common for a Sunday evening family dinner as well! Baking a whole Chicken would be reserved for the weekend in most cases, leaving fast and easy breast and thigh meat for the week. Deciding on which sides to serve can be overwhelming. Chicken is probably the most common main in most homes, especially for a weeknight dinner when time is short and rushed. Depending on the cut of chicken you choose, it can also be relatively inexpensive. My go-to cut of chicken is always boneless and skinless chicken thighs. It seems that no matter how I could them or season them, they’re always delicious. But, chicken can sometimes be boring, so we need sides to brighten up our dinner and make it a success. Spicy Jalapeno Chicken is one recipe I go back to over and over again. It’s spicy and very flavourful, but can withstand flavourful sides as well as simple sides like rice or salad.

HOW ABOUT SOME GREEN PEAS OR BRUSSELS SPROUTS?


With a total of five ingredients, Brussels Sprouts with Walnuts and Pancetta is certainly a budget-friendly, quick and easy side for your holiday dinner! This side has it all – a slight sweetness with lots of savoury flavour, saltiness, a deliciously prepared sprout, and crunchy nuts too. If you think you don’t like brussels sprouts, you might not have had them prepared like this!

WE CANNOT FORGET ABOUT CARROTS!

Using a combination of heirloom carrots, these Roasted Sliced Carrots are not only simple and delicious, but also quite an impressive side dish to serve with any dinner – they’re even special enough for a holiday side! The rule that simple is best certainly applies here because these carrots are prepared with common pantry ingredients only!

When it comes to mash, it is most certainly not limited to potatoes. Roasted Onion and Carrot Mash is one of my favourite sides and the flavour is simply incredible! Roasting the veggies adds caramelization and intensifies the natural sweetness, so no added sugar is needed. Good anytime, but great served with a holiday turkey dinner!

MISCELLANEOUS SIDES

Whenever we have leftover rice, it most always ends up in a skillet the next day with some combination of seasonings and other ingredients. This Vegetable and Egg Fried Rice is one of our favourites. Aromatics like ginger and garlic add so much flavour, and we love to incorporate lots of eggs for extra protein to make it a complete meal!

Harvard beets were a classic staple in our home when I was a child. My mom would purchase them in a can from the store and never ventured to prepare her own even though fresh beets were on hand in late summer. Serve these as a side or as a condiment and you will not be disappointed!









THESE LAST RECIPES NEED SOME EXPLAINING…
These next few recipes are very often paired together on one plate, for one meal, and is referred to as cold plates. I would be doing you and every Newfoundlander out there a disservice by not including these recipes on this list. Traditional Newfoundland Cold Plates were served in our home every single Sunday night without fail. In fact, they were also served at Easter, Thanksgiving, Christmas, and New Years!
Traditional Newfoundland Cold plates consist of three types of potato salads – there’s the Vegetable Potato Salad, (sometimes called White Salad) Pickled Beet Potato Salad, and the Mustard Potato Salad. There’s also a macaroni or pasta salad, and always a coleslaw too. Depending on who’s preparing the plate, there may or may not be a jello salad – I left that out because it wasn’t common for us and I actually do not like it!
Then you have your main, which in most cases is a turkey. We only had turkey on special occasions. When mom prepared Cold Plates for a regular Sunday night dinner, she would most likely include roasted chicken, sometimes roast beef, or rarely, glazed ham.
If there was turkey, you could count on there being dressing (stuffing) as well. And lastly, there were the little add-ins, like the slice of black forest ham that had been tightly rolled and pierced with a toothpick; the slice of tomato sitting atop some iceberg lettuce; the cranberry sauce; and, of course, the dinner roll.
All of this created the most popular and most recognized meal on the island. It probably still is! And, more importantly, it created my all-time favourite meal. I could seriously eat this every day and never grow tired of it.
