I hope you were able to spend the holiday season with your family and friends. If you did not, I do hope you at least took advantage of your downtime to relax and do something you love to do.
We were so blessed with a wonderful Christmas this year. I’m blessed to have you too, Dear Reader. As much as I love to cook and write, it is you who has driven my desire to make Lord Byron’s Kitchen bigger and better. I work hard to ensure my recipes are easy and perfect every time. I work hard to post a variety of recipes for all tastes and diets. And, I work hard to stay in touch with you and to answer your questions. Fresh cucumbers are sliced and tossed in a quick and easy homemade nutty, salty, creamy, spicy, and garlicky sauce. Toasting the peanuts first and combining them with peanut butter, soy sauce, and rice vinegar makes a delicious cold side, salad, or snack. Serve at room temperature immediately after preparing for the best results!

Thinly sliced beef, fried until crispy, and coated in a sweet and slightly spicy garlic and ginger sauce; 30 Minute Ginger Beef is an inexpensive dinner the whole family will love! Get ready, Dear Reader, because this is one of my most popular and loved recipes!

Pair these Canned Pickled Jalapenos with sandwiches, pizza, nachos, burgers, and even scrambled eggs! All you need to prepare these are jalapenos, white vinegar, salt, and water! Easily double or even triple the recipe and stock your canning pantry with these delicious hot and spicy morsels!

Sweet and sticky, garlicky and gingery, Japanese Yakitori Chicken is first marinated and then pan-fried with the most delicious, savoury sauce. Traditionally prepared on skewers, this version uses only a stovetop. It’s quicker and easier, which makes it a great weeknight dinner option!

A really good pizza comes down to two things – the dough and the sauce. The toppings are secondary to those! Canned Pizza Sauce is the answer to preparing a pizzeria style pizza at home. Make a batch, store it in your pantry, and make delicious pizzas at home for a fraction of the cost!

Spicy Jalapeno Chicken is a crispy fried chicken in a thick, sweet, savoury, and spicy sauce; this recipe is most certainly for the spicy food lover. Prepared with a light and crispy coating, this chicken can be as spicy or as mild as you like – it’s really up to your personal preference!

These bite-sized morsels of pork are so quick and easy to prepare! In less than 60 minutes, you can have these delicious Korean Pork Belly Bites on your dinner plate! Prepared with fresh garlic and ginger, and garnished with sliced green onions, expect an explosion of flavour here!

At the end of growing season, just before the first frost, harvest the last of those unripened cherry tomatoes and make a batch of Pickled Green Tomatoes! It’s a shame to let them go to waste when you can make something so delicious in just a few minutes!

These light and fluffy Corn and Jalapeno Fritters are so easy to prepare! Loaded with diced jalapenos, corn, garlic, green onions, and cheddar cheese, serve these as a side or as a main paired with a simple side salad. Oh, and they’re baked not fried!

Macaroni and Cheese is always good even when it’s bad, but you haven’t tasted good until you’ve feasted on this Jalapeno Popper Mac and Cheese! Not only is it the cheesiest and creamiest, but it’s also loaded with jalapenos, crispy bacon, fresh green onions, and chopped tomatoes too!
Lastly, Dear Reader, thank you for following me on this journey. I’ll be back this week with a new recipe and we’ll finally take a deserved break from all of that Christmas baking – at least for eleven months! I wish you all the very best and the happiest that 2026 has to offer! Cheers!

I enjoyed trying a few of these recipes—really straightforward and tasty. If anyone’s looking for some fresh food photos to go along with their cooking, there are some nice shots of healthy seafood dishes on Dreamstime. It adds a little visual inspiration while prepping.
