Leftover turkey never tasted so good! Shredded leftover turkey is tossed in a buffalo sauce and piled high onto your favourite sandwich bread or bun. Topped with melted cheese and dill pickles, this Buffalo Turkey Sandwich is simple, quick, and easy, yet it tastes absolutely incredible!

We had a huge turkey for Christmas dinner. The problem is that only two of us eat turkey. And, both of us don’t care for white meat. Whenever I roast a whole turkey, once it’s done, I simply remove both of the breasts and set them aside. The rest of the turkey is what we want! It doesn’t go to waste, however, because I love a good leftover turkey recipe, like this Buffalo Turkey Sandwich, for example!

Once the turkey breasts are cooled, I package them in food-safe sealable bags and vaccum seal them with my foodsafe vaccum sealer. I pop them in the freezer and I have turkey breast meat cooked and ready to go whenever I feel like turkey sandwiches, soups, or casseroles. I’m always in the mood for a sandwich though! So that’s just how those turkey breasts were put to use.
As a side note, you don’t need to use breast meat for this. Any leftover, cold turkey will do just fine. Just be sure to remove the skin or any fatty bits first.

INGREDIENTS NEEDED TO PREPARE THIS RECIPE
The following is a list of the ingredients needed to prepare this Deviled Ham Salad Croissant Sandwiches recipe. For exact amounts and measurements, refer to the printable recipe card located near the bottom of this post.
- Sandwich Buns or Sandwich Bread
- Turkey – I’m using leftover turkey breast meat. You can also use cooked cubed turkey that can be found in the deli section of most grocery stores.
- Buffalo Sauce
- Shredded Sharp Cheddar Cheese
- Dill Pickles
- Ranch Salad Dressing
- Tomatoes – Use the freshest tomatoes you can find. It makes a world of difference.
- Lettuce – I like to use bright green leafy lettuce, like green leaf lettuce or romaine.
HOW TO MAKE A BUFFALO TURKEY SANDWICH
Transfer the shredded turkey meat to a bowl and toss to coat well with the buffalo sauce. Set aside. In small skillet over medium-low heat, melt the shredded cheese until completely smooth. Gently stir the cheese with a rubber spatula to prevent burning or crisping. If the cheese starts to bubble, lower the heat. Once the cheese if fully melted, turn off the heat and set aside.
Next, smear the bottom portion of each sandwich bun with two tablespoons each of the ranch dressing. If you are adding lettuce and tomato to your sandwich, go ahead and add the lettuce leaves and tomato slices on top of the ranch dressing now. Follow that with half of the buffalo shredded turkey.
Spoon half of the melted cheese over top of the turkey and top with four dill pickle slices. Smear the top buns with the remaining ranch dressing and place it on the sandwich. Serve immediately with kettle chips on the side.

HOW TO SERVE A SANDWICH
I dearly love sandwiches; I really do! I’m that one person who loves to bake and cook, but can be easily satisfied with a sandwich. In fact, before I started to work from home, a few times a week, I would bring a sandwich to work for lunch. My favourite quick lunch is ham and cheese on good grainy bread with a hot cup of coffee. I love sandwiches with hot coffee!
But, on the occasion that I make sandwiches for dinner, I go all out. I love to serve sandwiches with kettle chips and a pickle on the side. Sometimes, I serve them with coleslaw and potato salad. A good, well-made sandwich can be quite impressive. Look at my White Bean Salad Sandwich and my Smashed Lentil Salad Sandwich. I would totally serve one of these, or this Dill Pickle Tuna Salad Sandwich, to any guest! Wouldn’t you?

Ingredients
