Leftover turkey never tasted so good! Shredded leftover turkey is tossed in a buffalo sauce and piled high onto your favourite sandwich bread or bun. Topped with melted cheese and dill pickles, this Buffalo Turkey Sandwich is simple, quick, and easy, yet it tastes absolutely incredible!
2buns (or 4 slices of your favourite sandwich bread)
3cupsshredded cooked leftover turkey(measure after shredding)
1/2cupbuffalo sauce
1cupshredded sharp white cheddar cheese
8dill pickle slices
8tablespoonsranch dressing
leaf lettuce,optional
sliced tomatoes,optional
Instructions
Transfer the shredded turkey meat to a bowl and toss to coat well with the buffalo sauce. Set aside.
In small skillet over medium-low heat, melt the shredded cheese until completely smooth. Gently stir the cheese with a rubber spatula to prevent burning or crisping. If the cheese starts to bubble, lower the heat. Once the cheese if fully melted, turn off the heat and set aside.
Next, smear the bottom portion of each sandwich bun with two tablespoons each of the ranch dressing.
If you are adding lettuce and tomato to your sandwich, go ahead and add the lettuce leaves and tomato slices on top of the ranch dressing now. Follow that with half of the buffalo shredded turkey.
Spoon half of the melted cheese over top of the turkey and top with four dill pickle slices.
Smear the top buns with the remaining ranch dressing and place it on the sandwich. Serve immediately with kettle chips on the side.
