Prepared with scrambled eggs, ham, and lots of melting cheese, these Make Ahead Croissant Sandwiches can be prepared weeks in advance. These are so delicious, you might want to make them often, not just for Christmas morning!

I used to not like a sandwich made with a croissant as the bread, but I realized that it was because my school cafeteria was just not preparing them the right way. On a whim, I prepared my Deviled Ham Salad on croissants a while back and I loved them! So, because these particular sandwiches are prepared with Christmas morning in mind, I thought a croissant would be the perfect choice again for my Make Ahead Croissant Sandwiches.
When I came up with the idea of writing a holiday breakfast series, it became quickly apparent that holiday breakfasts are a big deal. It also became quickly apparent that make-ahead breakfast sandwiches are a game changer for some people. I had no idea that these types of sandwiches were so popular! I have included two breakfast sandwiches in this series – this being the second – because of their popularity.

I dearly love sandwiches; I really do! I’m that one person who loves to bake and cook but can be easily satisfied with a sandwich. In fact, a few times a week, I’ll have a sandwich for lunch. My favourite quick lunch is ham and cheese on good grainy bread with a hot cup of coffee. I love sandwiches with hot coffee!
But, on the occasion that I make sandwiches for dinner, I go all out. I love to serve sandwiches with kettle chips and a pickle on the side. Sometimes, I serve them with coleslaw and potato salad. A good, well-made sandwich can be quite impressive. Look at my White Bean Salad Sandwich and my Smashed Lentil Salad Sandwich. I would totally serve one of these, or this Dill Pickle Tuna Salad Sandwich to any guest! Wouldn’t you?

CHRISTMAS BREAKFAST
Is Christmas breakfast important in your home? Does your family get up early and have breakfast before opening any presents, or do open the presents first? Traditions are passed down from generation to generation, and some of them are taken quite seriously, especially around the holidays! If a Christmas morning breakfast is not a tradition in your home, you should start one with these English Muffin Breakfast Sandwiches!
Christmas breakfast was not a thing in our home. My mom was very traditional when it came to Christmas dinner though. For John.e, a traditional breakfast of pancakes was served every Christmas morning. I’ve never adopted that tradition for him because to be quite honest, our dinner is so big and filling that breakfast would just ruin it!
Instead, we will usually have a piece of toasted bread or a bagel. Sometimes, I’ll have scones baked on Christmas Eve that we can have for breakfast the next day. But, this year, I’m trying something different! Right now, as I’m typing this up, it’s the third of July. Yes, I’m working on Christmas morning breakfast ideas already! The goal here is to perfect at least 12 different breakfast recipes that are festive, Christmasy, family-friendly, or all of the above, that you can make and enjoy with your family this Christmas morning.
I’m going to tell you all about this breakfast recipe and how you can make it in your home this holiday season, but first, I want to review the other Christmas recipes I have shared this holiday season. The last week of October, I finished up my first holiday recipe series for this year, called Lord Byron’s 12 Christmas Donuts. Then, I shared Lord Byron’s 12 Christmas Appetizers. Just last week, I shared the last recipe in my annual 24 Cookies of Christmas series. I still can’t believe that was Volume 6 of that series!
And now, with Christmas just a short time away, I’m kicking off this next series called Lord Byron’s 12 Christmas Breakfasts!

LORD BYRON’S 12 CHRISTMAS BREAKFAST SERIES
Another holiday series, Lord Byron? Yes – why not!? Welcome, Dear Reader, to the fourth of my annual holiday recipe series for this season! I’m calling this one Lord Byron’s 12 Christmas Breakfasts. This series will focus on easy-to-make and some make-ahead breakfasts that are both delicious and festive.
I will try to keep the recipes in this series quick and easy too. Most of them will require some baking, but they won’t be too complex that you can’t whip them up on Christmas morning, especially if you’re an early riser. Some are just assembly-type recipes, while others can be prepared in advance.
Just like every other holiday series that I’ve shared over the years, this series will see a new recipe shared every day for the next 12 days – even on Saturday and Sunday! You might be asking yourself, how many Christmas recipes could one possibly have or need? Well, I say you can never have too much of a good thing. And, I love having lots of choices. Who wants to prepare the same holiday recipes year after year?

INGREDIENTS NEEDED FOR THIS RECIPE
The following is a list of the ingredients needed to prepare this recipe. For exact amounts and measurements, refer to the printable recipe card located near the bottom of this post.
- Croissants – This recipe will prepare enough for six people so you will need six croissants.
- Eggs
- Ham – Use thinly sliced deli ham. Honey ham is a great choice, but so is Black Forest.
- Cheese Slices – Use a good melting cheese like provolone, cheddar, or mozzarella.
- Butter
- Mayonnaise
- Dijon Mustard – I love the sweetness of Honey Mustard and you can use that here. Regular yellow mustard can be used, but bear in mind that yellow mustard will tint the colour of your final product.
- Brown Sugar
- Ground Black Pepper
HOW TO PREPARE MAKE-AHEAD CROISSANT SANDWICHES
Whisk the eggs and scramble them in a skillet with one tablespoon of butter. Set aside to cool. In the meantime, combine the remaining two tablespoons of butter with the mayonnaise, dijon mustard, brown sugar, and ground black pepper. Evenly spread the butter and mayonnaise mixture onto each cut half of the croissants.
Lay the bottom half of the croissants onto a cutting board. Top each with one slice of cheese and a slice or two of ham. Next, layer on the scrambled eggs, evenly distributing them over the six croissants. Top the eggs with a second slice of cheese. Place the top half of the croissants on top and gently press down to sandwich everything together.
Wrap each individual sandwich in aluminum foil and place in your fridge until ready to bake. (Prepared sandwiches will keep in the fridge for 2-3 days.) To bake, remove the sandwiches from the fridge and place them on a baking sheet while you preheat your oven to 350 degrees F. Once preheated, bake the sandwiches for 20 minutes. Remove them from the oven and serve while still warm.
Lord Byron’s Notes
Another option for re-heating is to heat the aluminum-wrapped sandwiches for 10 minutes and then unwrap them and bake them for the remaining 10 minutes. The croissant will be browned and flaky on top. It is so good!
MAKE AND FREEZER
You can certainly make these Make-Ahead Croissant Sandwiches well in advance. In fact, you can prepare the sandwiches up to 4-6 weeks in advance. Wrap each sandwich tightly in aluminum foil. Next, stack the sandwiches into a large resealable Ziploc bag and place them in the freezer.
If you are reheating these from freezing, remove them from the freezer the night before and keep them refrigerated. In the morning, remove them from the bag and place the foil-wrapped sandwiches onto a baking sheet. Reheat them in a preheated 350 degrees F oven for 22 minutes. Remove the foil and serve.

WHAT IS A CROISSANT?
A croissant is a French pastry that is crescent-shaped. Even though there are earlier references to croissants in history, the first recipe appeared in 1906. The classic crescent-shaped pastry is made from a yeast-based dough, which is rolled and layered to incorporate butter. Sometimes, because of the cost of butter, margarine is used.
Golden, buttery croissants should be crisp and flaky on the outside and soft and tender on the inside, with a texture that can be almost pulled apart. Croissants are often stuffed with different sweet or savoury fillings. Most often, you will find sweet croissants filled with marzipan or chocolate. Savoury croissants, however, are often filled with cheese, eggs, or ham – just like you see here!

Make Ahead Croissant Sandwiches
Ingredients
- 6 croissants, sliced in half
- 8 large eggs
- 12 slices deli ham
- 12 slices cheese
- 3 tablespoons butter
- 2 tablespoons mayonnaise
- 1 tablespoon dijon mustard
- 1 tablespoon brown sugar
- 1/2 teaspoon ground black pepper
