Christmas breakfast was not a thing in our home. My mom was very traditional when it came to Christmas dinner though. For John.e, a traditional breakfast of pancakes was served every Christmas morning. I’ve never adopted that tradition for him because to be quite honest, our dinner is so big and filling that breakfast would just ruin it!

Instead, we will usually have a piece of toasted bread or a bagel. Sometimes, I’ll have scones baked on Christmas Eve that we can have for breakfast the next day. But, this year, I’m trying something different! Right now, as I’m typing this up, it’s the third of July. Yes, I’m working on Christmas morning breakfast ideas already! The goal here is to perfect at least 12 different breakfast recipes that are festive, Christmasy, family-friendly, or all of the above, that you can make and enjoy with your family this Christmas morning.
I’m going to tell you all about this breakfast recipe and how you can make it in your home this holiday season, but first, I want to review the other Christmas recipes I have shared this holiday season. The last week of October, I finished up my first holiday recipe series for this year, called Lord Byron’s 12 Christmas Donuts. Then, I shared Lord Byron’s 12 Christmas Appetizers. Just last week, I shared the last recipe in my annual 24 Cookies of Christmas series. I still can’t believe that was Volume 6 of that series!
And now, with Christmas just a short time away, I’m kicking off this next series called Lord Byron’s 12 Christmas Breakfasts!
LORD BYRON’S 12 CHRISTMAS BREAKFAST SERIES
Another holiday series, Lord Byron? Yes – why not!? Welcome, Dear Reader, to the fourth of my annual holiday recipe series for this season! I’m calling this one Lord Byron’s 12 Christmas Breakfasts. This series will focus on easy-to-make and some make-ahead breakfasts that are both delicious and festive.
I will try to keep the recipes in this series quick and easy too. Most of them will require some baking, but they won’t be so complex that you can’t whip them up on Christmas morning, especially if you’re an early riser. Some are just assembly-type recipes, while others can be prepared in advance.
Just like every other holiday series that I’ve shared over the years, this series will see a new recipe shared every day for the next 12 days – even on Saturday and Sunday! You might be asking yourself, how many Christmas recipes could one possibly have or need? Well, I say you can never have too much of a good thing. And, I love having lots of choices. Who wants to prepare the same holiday recipes year after year?

INGREDIENTS NEEDED FOR THIS RECIPE
The following is a list of the ingredients needed to prepare this recipe. For exact amounts and measurements, refer to the printable recipe card located near the bottom of this post.
- English Muffins – You will need one English muffin for each person. This recipe will prepare enough sandwich filling for four people.
- Eggs
- Tomato – Make sure the tomato is diced into smaller pieces. I like to cut the tomato in half first and remove the seeds and pulp.
- Bell Pepper – You can use red or green or a combination of both if you want your sandwich to look more Christmasy.
- Red Onion – I like to mild flavour of red onions, but white or yellow cooking onions will do the trick. Shallots are a great substitute as well!
- Cheese – Use a good melting cheese like provolone, cheddar, or mozzarella.
- Bacon – You can substitute the bacon with cooked sausage if you wish.
- Butter
- Salt and Ground Black Pepper
HOW TO MAKE ENGLISH MUFFIN BREAKFAST SANDWICHES
Add the butter and red onion to a skillet and cook over medium heat for 2-3 minutes, or until the onions are translucent. Add the tomatoes and bell pepper. Cook for 2-3 minutes more.
Next, add the whisked eggs and stir to incorporate the onions and peppers. Scramble the eggs with the peppers and onions until they are cooked to your liking. Once the eggs are cooked, remove them from the heat and allow them to cool for 15 minutes. In the meantime, separate the English muffins and sprinkle a quarter cup of shredded cheese on the bottom half of each muffin.
Once cooled, divide the egg mixture onto the bottom half of the toasted English muffins. Top the eggs with the rest of the shredded cheese. Place them under your broiler until melted and bubbly. Top with a couple of slices of fried bacon, place the top half of the muffin on, and serve.
MAKE THESE IN ADVANCE!
You can certainly make these English Muffin Breakfast Sandwiches well in advance. I would not recommend broiling the prepared sandwiches to melt the cheese first though! If preparing the night before, you can set them on a plate or baking sheet and wrap them well with plastic wrap and keep them refrigerated. In the morning, remove the wrapping and pop them in a preheated 350 degrees F oven for 8-10 minutes or until the cheese is melted and serve.
Alternatively, you can prepare the sandwiches up to 4-6 weeks in advance. Again, do not broil them to melt the cheese! Wrap each sandwich tightly in aluminum foil. Next, stack the sandwiches into a large resealable Ziploc bag and place them in the freezer.
If you are reheating these from freezing, remove them from the freezer the night before and keep them refrigerated. In the morning, remove them from the bag and place the foil-wrapped sandwiches onto a baking sheet. Reheat them in a preheated 350 degrees F oven for 10-12 minutes. Remove the foil and serve.
WHAT ARE ENGLISH MUFFINS?
An English muffin is a small, round, and flat yeast-leavened bread that is four inches round and about an inch thick, depending on the brand. They are generally sliced and toasted before being smeared with butter. In North America, Australia, and New Zealand, they are often topped with fruit jam, honey, eggs, sausage, bacon, or cheese.
As you may know, English muffins are an essential ingredient in Eggs Benedict, and a variety of breakfast sandwiches are derived from it, such as the McMuffin at McDonalds.
Did you know that English muffins did not originate in England? They were not introduced to British grocers until sometime in the 1990s; that was when the Thomas’ brand of English muffins made their way across the pond from North America. I read that English muffins are sold in the UK as American muffins. Isn’t that odd? Even though this style of muffins can be found in many flavours, including whole wheat, multigrain, cinnamon raisin, cranberry, and apple cinnamon, for these English Muffin Breakfast Sandwiches, I’m using plain.

English Muffin Breakfast Sandwiches
Ingredients
- 4 English Muffins
