A side dish needn't be complicated and fussy; Sauteed Green Peas are a wonderful side to almost any meal! Just a few basic ingredients, like peas, garlic, and shallots are all you need to transform the humble pea into an extraordinary side!
4largeshallots,peeled, halved, and cut into 1/4 inch slices
1clovegarlic,finely minced
1tablespoonbutter
1teaspoonolive oil
1/2teaspoonsalt
1/2teaspoonground black pepper
2tablespoonsfresh parsley,finely chopped (plus more for garnish)
Instructions
In a skillet over medium heat, add the olive oil, butter, and shallots. Saute the shallots until softened and lightly browned - about 5-7 minutes.
Add the garlic and continue to cook for 2 minutes.
Next, add the frozen green peas, salt, and ground black pepper. Stir into the shallots and garlic. Cook for 3-5 minutes or until the peas are heated all the way through.
Turn off heat. Add parsley and stir into the green peas.
Plate, garnish, and serve immediately.
Notes
When buying frozen green peas, purchase the larger green peas, not the petite. The smaller peas cook too quickly in the skillet and lose their bright green colour.
