I have stated time and time again, my love of being in the kitchen.  I really do derive so much pleasure from the prepping side of things – washing, cutting, chopping, etc. – and the cooking – sautéing, boiling, grilling, frying, baking, etc. – even the washing the dishes aren’t that bad!  Although, that’s how John.e helps to support my little blog here.  He never complains – ever! – about helping with the clean up.  Maybe it’s because he gets to eat all of the goodies – like these no bake energy bites here!

I don’t want to give the impression that John.e is unsupportive with my blogging efforts.  He does way more than just clean the dishes.  In fact, he’s invested his time and money into props, lighting, staging areas, camera equipment, and he has edited many of the photos you see in my posts.  For example, last year, my M&M Chocolate Chip Skillet Cookie was rejected by Foodgawker for having some issues with being too dark. (some food bloggers work so hard to get their photos accepted by Foodgawker!)  John.e edited the photo, I resubmitted, Foodgawker accepted, and it’s been one of my highest visited posts to date!

If you have a moment, click on the link to the M&M Chocolate Chip Skillet Cookie and check out the first and last photo on the post.  They are the same photo, but one was edited by John.e.  The tea towel in the first photo is the actual colour of that particular towel.  In the last photo, John.e changed the tea towel from black to green and lightened up the colours of the M&M candies.  Looks great, right!  So, you see, he does so much to help me out.  Oh, and he’s great with holding the reflector board too!

So, why not treat him with these lovelies!?  Truth be told, these were a treat for me too.  As I mentioned earlier, as much as I love working the kitchen, sometimes, a no-bake, fast recipe is just what I need to get me out of my funk.  There’s just something about baking that puts me in a great mood!  And, who wouldn’t be in a great mood getting their hands dirty with these colourful little morsels of energy and goodness!?  Get your kids – and if you don’t have any of your own, borrow the neighbours’ kids (they’ll thank you!) and start no-baking!

These are so good!  There’s a very peanut-y flavour to them; the little pops of chocolate from the chips and the candies add just the right amount of sugar, with a little crunch from the candy coating; then, let’s not forget about the health benefits of the oats and honey!  These are the complete package!  By the way, if they are left out of the fridge, they do tend to get a little soft.  Keep them cool as much as possible.

No Bake Energy Bites

Ingredients
  • 1¼ cups oats
  • ½ cup peanut butter
  • ¼ cup honey
  • ½ cup mini M&Ms
  • ½ cup mini chocolate chips
Instructions
  1. Easiest recipe to bring together - grab a mixing bowl, one big enough to allow for some good mixing room.
  2. Add all of the ingredients to the bowl in no particular order.
  3. Stir very well with a large wooden spoon until everything is evenly combined.
  4. Use a small scoop to portion the mixture evenly. Roll into balls and place on a parchment-lined tray.
  5. Transfer to the refrigerator for 1-2 hours to firm up. Enjoy!
