When it comes to ice cream, nothing beats Mint Chocolate Chip Ice Cream. I think it’s the only ice cream flavour everyone can agree on!
Of all the ice cream flavours available, I think this one is the flavour both John.e and McKenna seem to crave the most. So, it makes perfect sense that I take a few minutes and make a batch of Mint Chocolate Chip Ice Cream for the two people I love the most.
I cannot tell you how excited I am to have stumbled upon these no churn ice cream recipes on Pinterest. I absolutely love how easy they are to make! Since I’m one of those pantry shoppers, I always have canned condensed milk on hand. Most of us have chocolate chips in our pantry stash somewhere, and you know just as well as I do that there’s a bottle of mint or peppermint extract pushed to the back of your refrigerator just waiting for some attention.
Speaking of condensed milk, I must say, it’s an ingredient that I really love to use in dessert recipes. If you shop at Costco, you can get three tins of the Eagle Brand condensed milk for ten dollars, which is a complete bargain!
Condensed milk is a very versatile product. I do use it for Christmas baking quite a bit, but also in other baked goods as well. One of my personal favourites is my Lemon Coconut Macaroons, but a close second would be my Butterscotch Pumpkin Cookies.
Of course, we all know that condensed milk is a must-have ingredient in fudge recipes. I have a basic fudge recipe that I use for most of my fudge creations. I think my Turtle Chocolate Fudge is my favourite, but my 3 Ingredient Maltesers Fudge is so tasty as well.
One more shamless recipe plug before we get back to the ice cream. If you have no used condensed milk in a dip, you have got to try this one: Newfoundland Donair Sauce. This recipe is made in our home at least once a month. We use it as a pizza crust dip, which sounds odd, but is totally amazing. If you take no other suggestion, please give this one a try!
Now, back to the Mint Chocolate Chip Ice Cream! Besides the heavy cream, that’s all you really need to make this delicious and gorgeous ice cream. You can even forego the food colouring if you don’t mind having a white mint chocolate chip ice cream. In fact, that would certainly look more elegant, and it would be a nice surprise, because most of us would expect the ice cream to be vanilla!

Mint Chocolate Chip Ice Cream
Ingredients
- 2 cups heavy whipping cream, cold
- 14 ounces canned condensed milk
- 1 teaspoon mint extract
- 2 cups milk chocolate chips, see notes
- 1-2 drops green food colouring
Instructions
- Chill a metal bowl for 10-15 minutes in your freezer.
- Using a handheld mixer, whisk the whipping cream until stiff peaks form.
- Add the peppermint/mint extract. Slowly drizzle in the condensed milk while mixing on a low speed.
- Don't over mix. The whipping cream will deflate. Just incorporate the condensed milk into the mixture.
- Lastly, add the chocolate chips and mix through just briefly.
- Transfer to a freezer-safe container, cover and freeze for 6 hours.

My lack of a sweet tooth does not extend as far as ice cream I am happy to say and all them there fancy new fangled flavours can take a long walk off a short pier… My favourite ice cream is mint choc chip and it always has been, great recipe!

I am going to try this with a few modifications. Peppermint extract, crushed peppermint candy discs and red food coloring. I will be able to have peppermint candy cane ice cream year around now – not just at Christmas!
